Art’s Chicken #3

Ingredients

  • 4 chicken thighs and 2 breasts
  • 5 small red or white potatoes
  • 2-3 carrots
  • ¾ cup uncooked rice
  • ½ bottle Goya pitted Manzanilla olives
  • cilantro
  • 15 oz can of tomatoes
  • 1 large onion
  • 2 cloves garlic
  • 1 tsp bryani paste

Instructions

Parboil potatoes and peeled/cut carrots

Saute onion and garlic in olive oil.  Add rice. Remove to bowl

Brown onions and chicken

Add potatoes and carrots. Add tomatoes.  Add cilantro and olives

Dissolve 1 tsp bryani paste in 1 cup water from vegetables.  Add to chicken

Cover and cook 20-30 min til done.
