Steamed Cod
Ingredients
- 1 lb cod loin (captain's cut)
- 1 package baby spinach
- Heat butter and olive oil in pan
Instructions
Add spinach and ¼ lemon.
Cover. Steam five min
Place cod on spinach
Season with ¼ lemon, ginger, paprika
Cover. Steam five-six min
Serve
Baked Salmon in Foil
Ingredients
- 1 lemon thinly sliced
- 1 lb salmon fillet
- Kosher salt
- 3 tbsp butter melted
- 1 tbsp honey
- 2 cloves garlic, minced
- 1 tsp chopped thyme leaves
- 1 tsp dried oregano
- chopped fresh parsley for garnish
Instructions
Preheat oven to 350F
Line a large rimmed baking sheet with foil and grease with cooking spray.
Lay lemon slices in an even layer in the center of the foil
Season both sides of the salmon with salt and place on top of lemon slices
In a small bowl, whisk together butter, honey, garlic, thyme, and oregano.
Pour over salmon then fold up foil around the salmon.
Bake about 20 min until almost done, then broil about 2 min until done
Garnish with parsley before serving
