Chicken
Chicken and Rice for 30-40 for events
Ingredients
- 8 lbs chicken thighs, drumsticks, breasts (quartered)
- 4 cups potatoes in large cubes
- 2 cups sweet potatoes in large cubes
- 5 cups carrots in chunks
- 7 cups coarsely chopped onions
- 4 cups mushrooms'onions
- Cilantro (1 bunch)
- 2 26-oz cans tomatoes
- 4 cups white rice
- 8 cloves garlic
- 3 tbsp chopped ginger root
- 1-2 tbsp bryani paste
Instructions
Boil 2-3 quarts water. Add carrots. After 5 min add potatoes and sweet potatoes for another 10-12 min
Drain vegetables, saving liquid
In big pot brown onions, garlic, ginger, mushrooms. Remove and set aside.
In same pot brown chicken (in batches). Remove and set aside
In same pot brown rice
Put rice in bottom of large serving pan. Top with vegetable mix, onion mix, cilantro
Add tomatoes with their juice
Dissolve 1-2 tbsp briyani paste in 1 quart liquid from vegetables. Pour over rice/vegetables.
Add another quart of liquid from vegetables.
Cover pan tightly with foil
Bake at 400F for 30 min
Reduce temperature to 350F and cook until water is absorbed – about 2 hours
Chicken Stew
Ingredients
- 1 chicken
- 1 large onion (1-2 cups)
- 2 large carrots (2 cups)
- 2 large parsnips
- ½ lb mushrooms
- sausage or bacon
- 2 cloves garlic
- 2 stalks celery
- frozen peas or kale
- 14 oz can tomatoes
- Tarragon, Cilantro, bay leaf, cinnamon stick, cardamom
- ½ cup wine
- ¼ cup rice vinegar
Instructions
Brown cut up chicken in dutch oven with sausage
Add other ingredients in order
Add wine and rice vinegar
Simmer 1 to 3 hours

Ingredients
- 6 chicken thighs
Instructions
6 chicken thighs
Sprinkle with cinnamon, ground cloves, salt and rub in
Brown thoroughly in olive oil
Remove and set aside
In same skillet brown 1 large onion chopped, ¾ cup uncooked rice
Return chicken
Add: sliced mushrooms (½ cup)
currants (½ cup)
raw crushed cranberries (¾ cup)
Add: 1 cup hot water or bullion
½ cup white wine
Cover and simmer 30 min until done

Ingredients
- 4 chicken thighs and 2 breasts
- 5 small red or white potatoes
- 2-3 carrots
- ¾ cup uncooked rice
- ½ bottle Goya pitted Manzanilla olives
- cilantro
- 15 oz can of tomatoes
- 1 large onion
- 2 cloves garlic
- 1 tsp bryani paste
Instructions
Parboil potatoes and peeled/cut carrots
Saute onion and garlic in olive oil. Add rice. Remove to bowl
Brown onions and chicken
Add potatoes and carrots. Add tomatoes. Add cilantro and olives
Dissolve 1 tsp bryani paste in 1 cup water from vegetables. Add to chicken
Cover and cook 20-30 min til done.
