Chicken Stew

Ingredients

  • 1 chicken
  • 1 large onion (1-2 cups)
  • 2 large carrots (2 cups)
  • 2 large parsnips
  • ½ lb mushrooms
  • sausage or bacon
  • 2 cloves garlic
  • 2 stalks celery
  • frozen peas or kale
  • 14 oz can tomatoes
  • Tarragon, Cilantro, bay leaf, cinnamon stick, cardamom
  • ½ cup wine
  • ¼ cup rice vinegar

Instructions

Brown cut up chicken in dutch oven with sausage

Add other ingredients in order

Add  wine and rice vinegar

Simmer 1 to 3 hours
